Instant Pot Gumbo
Traditionally, Gumbo is one of the most time-consuming Creole dishes to make, and when you’ve got a hungry family ready to eat their shirt if they’re not fed in thirty minutes, time may not be on your side. Fortunately for you (as well as your children’s wardrobe) there is an answer in this Instant Pot gumbo recipe. Use this quick and easy gumbo recipe to satisfy even the pickiest of eaters.

Method
Set Instant Pot to Sauté. Add in ¼ cup of canola oil and whisk in five tablespoons of flour for about 25 minutes. Add chopped onion, one cup of chopped bell pepper, one cup of chopped celery, three large garlic cloves, and one teaspoon of salt. Stir for about six minutes. Add twelve ounces of chopped chicken thighs, six ounces of smoked sausage, three cups of chicken stock, two cups of frozen sliced okra, one can of diced tomatoes, two teaspoons of thyme, two teaspoons of creole seasons, and one bay leaf.
Seal the Instant Pot with the lid, and set the steam vent to sealed position. Once sealed, set the pot to pressure position for four minutes. When finished, release the steam valve, and open the lid. Divide the gumbo evenly among your bowls, and top with rice and scallions.
